Juicy chicken breasts are sliced and cooked with a flavorful vinaigrette to get things started. Then, that same dressing is brushed onto beautiful ciabatta rolls and topped with roasted sweet red peppers, sweet basil leaves, and shredded Romano cheese to complete restaurant-quality sandwiches that you can enjoy whenever you like! Peppered Chicken Sandwiches will be a wonderful addition to your meal menu, and you won't even have to fight for parking to enjoy it! Ingredients
- 1/2 teaspoon black pepper
- 1/4 teaspoon salt
- paprika, to taste
- 1 pound chicken breasts, boneless and skinless, cut into 1/2-inch-thick slices
- 6 tablespoons olive oil and vinegar salad dressing, store-bought or homemade, divided
- 6 ciabatta rolls, split
- 18 basil leaves
- 1 (7-ounce) jar roasted sweet red peppers
- 1/4 cup Romano cheese, shredded
Directions
Step 1 -In a small bowl, add the black pepper, the salt, and the paprika and stir to combine.
Step 2 -Evenly sprinkle the chicken slices with the seasoning mixture.
Step 3 -In a large nonstick skillet over medium-high heat, add 2 tablespoons of the salad dressing and the seasoned chicken slices and cook until the meat reaches an internal temperature of 165 degrees F, about 4-5 minutes per side.
Step 4 -Use a pastry brush to coat the cut-sides of the ciabatta rolls with the remaining salad dressing.
Step 5 -Evenly sprinkle the basil leaves over the coated ciabatta rolls.
Step 6 -Evenly divide the cooked chicken slices and the red peppers amongst the ciabatta roll bottoms.
Step 7 -Evenly sprinkle the Romano cheese on top of the red peppers and return the ciabatta roll tops onto all of the sandwiches.
Step 8 -Serve.
