Ingredients
- 1 cup peanuts, salted
- 1 tablespoon paprika
- 2 teaspoons onion powder
- 2 teaspoons ground ginger
- 1 teaspoon crushed red pepper flakes
- 1 teaspoon garlic powder
- 1 (2-pound) beef tri-tip roast or beef top sirloin steak, thinly sliced against the grain
- 2 tablespoons canola oil
- 1 teaspoon salt
- 1 medium onion, cut into wedges
- 1 large tomato, cut into wedges
- fresh cilantro leaves, to taste
Directions
Step 1 -Add the peanuts to a food processor and process until they are finely chopped.
Step 2 -Add the paprika, the onion powder, the ginger, the red pepper flakes, and the garlic powder to the peanuts and pulse until they are combined.
Step 3 -Place the beef slices in a large bowl or shallow dish, drizzle them with the oil, sprinkle them with the salt, and toss to coat.
Step 4 -Add the peanut mixture to the beef slices and turn to coat.
Step 5 -Cover the beef slices and refrigerate for 2 hours.
Step 6 -Preheat the grill to medium-high heat.
Step 7 -Drain the beef slices and discard the marinade.
Step 8 -Thread the beef slices onto metal skewers or soaked wooden skewers.
Step 9 -Grill the skewers, covered, turning occasionally, until a thermometer inserted into the center of the beef slices reads at least 135 degrees F, 10-15 minutes.
Step 10 -Serve the skewers with the onion, the tomato, and the cilantro.
