This delicious, Tex-Mex take on a sunrise classic comes with a little kick thanks to some spicy chorizo sausage and zesty chili peppers. The nutty pinto beans, sweet corn, juicy tomatoes, crunchy bell peppers, fluffy corn tortillas, rich sour cream, and salty cheeses are layered up to bring the flavor and fun! Ingredients
- 1/4 pound chorizo sausage, casings removed
- 1 cup of warm water
- 3/4 cup instant dry milk
- 3 (6-inch) corn tortillas, cut into bite-size pieces
- 2 cups eggs, beaten
- 1 (15-ounce) can of pinto beans, rinsed and drained
- 1 (10-ounce) can of diced tomatoes and green chilis, drained
- 1 cup whole kernel corn, frozen
- 1/2 cup green chili pepper, chopped
- 1/2 cup pepper jack cheese, shredded
- 1/2 green bell pepper, chopped
- 4 green onions, chopped
- 2 tablespoons light sour cream, or to taste
- 1/2 cup Mexican cheese blend, grated
Directions
Step 1 -Preheat the oven to 375 degrees F.
Step 2 -Spray an 8-inch square glass baking dish with cooking spray.
Step 3 -Heat a medium skillet over medium-high heat.
Step 4 -Add the sausage to the skillet and cook until browned and crumbly, about 3-5 minutes.
Step 5 -Transfer the sausage from the skillet and drain it on a paper-towel-lined plate.
Step 6 -In a large bowl, mix the water and the dry milk together.
Step 7 -Add the cooked sausage, tortillas, eggs, pinto beans, diced tomatoes, corn, green chili, pepper jack cheese, bell pepper, and green onions to the dry milk mixture. Mix well.
Step 8 -Pour the meat mixture into the prepared dish.
Step 9 -Bake until golden brown and the middle is set, about 55-60 minutes.
Step 10 -Carefully transfer the bake from the oven, spread with the sour cream, and sprinkle with the Mexican cheese.
Step 11 -Continue baking the sour cream and cheese-topped bake until the cheese has melted, about 1 minute.
Step 12 -Let the bake cool slightly.
Step 13 -Serve.
