Mimi always claimed that cookies should be considered a breakfast food too. After all, if pastries could be enjoyed as breakfast fare, then why not cookies too? To make sure she got her sweet-fix without missing out on the protein, she created Mimi's Special Breakfast Cookies. They're loaded with creamy peanut butter flavor, energizing oats, and crunchy chia seeds, all sweetened with honey, so they're already pretty amazing on their own. But, the best part about Mimi's Special Breakfast Cookies is that they can be customized however you want! Want chocolate chips? Go for it! Pretzel crumbles? Absolutely! This is the no-bake treat that will get you bounding towards a better day!

Ingredients
- 3/4 cup creamy peanut butter, plus more, to taste
- 2 tablespoons honey, plus more, to taste
- 1 teaspoon vanilla extract
- 1 tablespoon chia seeds
- 3/4 cup old-fashioned oats, plus more, to taste
- chocolate chips or pretzel crumbles, optional, to taste
Directions
Step 1 -Line a baking tray with parchment paper.
Step 2 -Place 3/4 cup of the peanut butter, 2 tablespoons of the honey, and the vanilla in a microwave-safe bowl.
Step 3 -Microwave the mixture for 20 seconds.
Step 4 -Stir the peanut butter mixture until well-combined.
Step 5 -Taste the peanut butter mixture, adding the extra honey, to taste, for more sweetness.
Step 6 -Add the chia seeds, 3/4 cup of the oats, and the optional mix-ins into the peanut butter mixture and stir well until well-incorporated.
Step 7 -Taste the mixture for flavoring, adding more of the oats if the mixture is too runny and more of the honey or the peanut butter if it is too dry.
Step 8 -Roll the mixture into eight balls.
Step 9 -Place the balls on the prepared baking sheet and slightly press them flat.
Step 10 -Place the cookies in the fridge or the freezer to chill until set, at least 1 hour and up to overnight.
Step 11 -Allow the cookies to thaw for a few minutes before serving.
Step 12 -Serve.
