Ingredients
- 1 1/2 pounds chicken breasts, boneless and skinless, cut into 1/2-inch pieces
- 1 (16-ounce) package andouille sausage, cut into 1/4-inch pieces
- 1 red bell pepper, chopped
- 1 cup onion, chopped
- 1 (15-ounce) package ricotta cheese
- 1 large egg
- 1 tablespoon dried basil
- 2 (15-ounce) jars Alfredo sauce
- 2 1/2 cups parmesan cheese, grated, divided
- 8 lasagna noodles, cooked to al dente, according to the package directions
- 1 (6-ounce) bag baby spinach, stemmed
- 8 ounces mozzarella cheese, shredded
Directions
Step 1 -Preheat the oven to 350 degrees F.
Step 2 -Coat a 9x13–inch baking dish with nonstick cooking spray.
Step 3 -In a large skillet over medium-high heat, add the chicken, the sausage, the bell pepper, and the onion and cook until the meat is cooked through and the vegetables are softened, about 5-7 minutes.
Step 4 -Drain the excess fat from the skillet.
Step 5 - In a small bowl, combine the ricotta, the egg, and the basil.
Step 6 -Add the Alfredo sauce and 2 cups of the parmesan into the skillet with the meat-vegetable mixture and mix until well-combined.
Step 7 -In the bottom of the prepared baking dish, place 4 of the cooked lasagna noodles.
Step 8 -Spread 1/2 of the ricotta mixture over the noodle layer.
Step 9 -Top the ricotta layer with 1/2 of the meat-vegetable mixture, 1/2 of the spinach, and 1/2 of the mozzarella cheese.
Step 10 -Repeat the layers, starting with the noodles.
Step 11 -Bake the lasagna until cooked through and bubbly, about 45 minutes.
Step 12 -Sprinkle the lasagna with the remaining parmesan cheese.
Step 13 -Let the lasagna stand before serving, about 10 minutes.
Step 14 -Serve.
