Ingredients
- 2 tablespoons olive oil
- 1 shallot, chopped
- 1 1/2 cups forbidden black rice, such as Lotus Foods® Forbidden Rice
- 1 teaspoon dried thyme
- 2 1/2 cups plus 1 tablespoon vegetable broth
- 1 teaspoon garlic powder
- 1 bay leaf
- salt, to taste
- pepper, to taste
- 1/3 cup sliced almonds, divided
- 2 tablespoons parsley, for garnish
Directions
Step 1 -In a 10-inch skillet over medium heat, add the oil.
Step 2 -Add the shallots to the heated oil and cook, while stirring, until they are golden and fragrant, about 4-5 minutes.
Step 3 -Add the rice and the thyme to the shallots and sautè, about 3-4 minutes.
Step 4 -Add the vegetable broth, the garlic powder, the bay leaf, the salt, the pepper, and 1/2 of the almonds to the rice mixture and bring to a simmer, stirring constantly.
Step 5 -Cover the skillet and reduce the heat to low. Cook the rice mixture until all the liquid has evaporated and the rice is tender, about 25-30 minutes.
Step 6 -Serve the rice garnished with the remaining almonds and the parsley.
