- For the pizza:
- 1 cup all-purpose flour
- 1/4 cup confectioners' sugar
- 1/2 cup cold butter, cubed
- For the glaze:
- 5 teaspoons cornstarch
- 1 1/4 cups unsweetened pineapple juice
- 1 teaspoon lemon juice
- For the fruit topping:
- 1 (8-ounce) package reduced-fat cream cheese
- 1/3 cup sugar
- 1 teaspoon vanilla extract
- 2 cups fresh strawberries, halved
- 1 cup fresh blueberries
- 1 (11-ounce) can mandarin oranges, drained
Directions
Step 1 -Preheat the oven to 350 degrees F.
Step 2 -In a large bowl, mix the flour and the confectioners' sugar together, and then cut in the butter until a crumbly texture forms.
Step 3 -Press the crumble into an ungreased 12-inch pizza pan.
Step 4 -Bake the crust until it is very lightly browned, about 10-12 minutes.
Step 5 -Cool the crust completely on a wire rack.
Step 6 -In a small saucepan, mix the cornstarch, the pineapple juice, and the lemon juice until it is smooth, and bring to a boil.
Step 7 -Cook and stir the glaze until it thickens, about 2 minutes.
Step 8 -Let the glaze cool slightly.
Step 9 -In a bowl, beat the cream cheese, the sugar, and the vanilla with an electric hand mixer until it's smooth.
Step 10 -Spread the cream cheese mixture over the crust and top with the strawberries, the blueberries, and the mandarin oranges.
Step 11 -Drizzle the dessert pizza with the glaze and refrigerate until it is cold.
