Ingredients
- 1/4 cup plus 2 tablespoons extra-virgin olive oil, plus more, to taste
- 1 pound link sausage
- 10 baby carrots
- 3 bell peppers, colors of your choice, chopped
- 2 tomatoes, quartered
- 1 onion, cut into big chunks
- 5 cloves garlic, sliced
- 1 teaspoon red chili flakes
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 teaspoon dried basil
- 1/3 cup fresh parsley, chopped
- 1/2 cup chicken broth
- 2 potatoes, sliced into 1/4-inch-thick rounds
- salt, to taste
- pepper, to taste
- 1/3 cup parmesan, shredded or grated, can substitute mozzarella or Italian blend
Directions
Step 1 -Preheat the oven to 400 degrees F.
Step 2 -Grease a 9x13-inch baking dish.
Step 3 -In a skillet over medium heat, add 2 tablespoons of the oil and the sausage links and cook until they are browned all over, about 3-4 minutes per side.
Step 4 -Transfer the sausage links from the heat to cool, then cut them into chunks.
Step 5 -Place the cooked sausage pieces, the carrots, the bell peppers, the tomatoes, and the onions in the bottom of the prepared baking dish.
Step 6 -In a bowl, add 1/4 cup of the oil, the garlic, the chili flakes, the oregano, the thyme, the rosemary, the basil, and the parsley, and stir to combine.
Step 7 -Drizzle 1/4 of the oil mixture over the sausage mixture.
Step 8 -Pour the chicken broth over the sausage mixture.
Step 9 -In a large bowl, add the potatoes and the remaining oil mixture and toss to combine.
Step 10 -Arrange the coated potatoes over the sausage mixture.
Step 11 -Season the potatoes with the salt and the pepper, then drizzle with the extra oil.
Step 12 -Sprinkle the cheese over the potatoes.
Step 13 -Bake the sausage bake until the potatoes are fork-tender, about 45-50 minutes. Cover with foil if the top of the casserole browns too quickly.
Step 14 -Serve.
