Ingredients
- For the bars:
- 1/2 cup butter, softened
- 2 cups granulated sugar
- 3 large eggs, room temperature
- 1 1/2 cups ripe bananas, mashed
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- salt, to taste
- For the frosting:
- 1 (8-ounce) package cream cheese, softened
- 1/2 cup butter, softened
- 4 cups confectioners' sugar
- 2 teaspoons vanilla extract
Directions
Step 1 -Preheat the oven to 350 degrees F.
Step 2 -Grease a 15x10x1-inch baking dish.
Step 3 -In a large bowl, add 1/2 cup of the butter and the granulated sugar and beat with an electric hand mixer until it is light and fluffy, about 5-7 minutes.
Step 4 -Add the eggs, the bananas, and 1 teaspoon of the vanilla extract to the butter mixture and beat to combine.
Step 5 -In a medium bowl, add the flour, the baking soda, and the salt and whisk to combine.
Step 6 -Add the flour mixture to the butter mixture and stir with a rubber spatula until it is just combined.
Step 7 -Pour the batter into the prepared baking dish and bake until a toothpick inserted into the center comes out clean, about 20-25 minutes.
Step 8 -Transfer the baking dish to a wire rack and let the banana bars cool.
Step 9 -In a small bowl, add the cream cheese and the remaining butter and beat with an electric hand mixture until it is fluffy.
Step 10 -Add the confectioners' sugar and the remaining vanilla extract to the cream cheese mixture and beat until it is smooth.
Step 11 -Spread the frosting over the cooled banana bars.
Step 12 -Cut the banana bars into squares and serve.
