Nothing says "whew, glad that's over" like After-School Cookies! These aren't just any old chocolate chip cookies: the cookies themselves are richer in flavor with an embedded creamy vanilla taste and crunchy nuts to accent the buttery, brown sugar flavor. Ingredients

  • 1 cup butter, softened
  • 3/4 cup sugar
  • 3/4 cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups quick-cooking oats
  • 1 1/2 cups all-purpose flour
  • 1 (3.4-ounce) package instant vanilla pudding mix
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2 cups semisweet chocolate chips
  • 1 cup nuts, chopped

Directions

Step 1 -Preheat the oven to 375 degrees F.

Step 2 -In a large mixing bowl, add the butter, the sugar, and the brown sugar and beat with an electric hand mixer until light and fluffy.

Step 3 -Beat the eggs and the vanilla into the butter mixture.

Step 4 -In a medium bowl, combine the oats, the flour, the pudding mix, the baking soda, and the salt.

Step 5 -Gradually add the oat mixture to the butter mixture and mix well.

Step 6 -Add the chocolate chips and the nuts to the dough mixture and stir to combine.

Step 7 -Drop the dough in level tablespoonfuls 2-inches apart onto ungreased baking sheets.

Step 8 -Bake the cookies until they are lightly browned, about 10-12 minutes.

Step 9 -Transfer the cookies to wire racks to cool.

Step 10 -Serve.
