This recipe for Watermelon Salad is so simple it’s hardly a recipe. But it’s the perfect way to take advantage of the watermelon season in the summer. Juicy chunks of red watermelon mix with salty feta and cooling mint for a refreshing flavor profile. A simple citrus and olive oil vinaigrette ties Watermelon Salad all together.
Ingredients• 1/4 cup extra virgin olive oil • 2 tablespoons freshly squeezed lime juice or lemon juice • 1/2 teaspoon kosher salt • freshly ground black pepper, to taste • 1 small watermelon (3 pounds), rind removed, cut into 1-inch chunks, and chilled • 1/4 cup mint leaves, chopped • 4 ounces feta cheese, crumbled
In a small mixing bowl, combine the olive oil, lemon or lime juice, salt, and pepper.
Pour the dressing over the chilled watermelon along with the mint.
Toss very gently and sprinkle with feta. Serve.
