Uncle Jim's Bacon Jam has the perfect balance of fatty, salty, sweet, and savory, with notes of smokiness and caramel within its delicious meatiness. This recipe is sure to become a staple in your family, just as it is for ours!
Heat a large skillet on the stove-top over medium heat.
Once heated, throw in the bacon chunks and cook until all the pieces are evenly cooked and crispy.
Move the bacon pieces to a separate plate and reserve 2 tablespoons of the bacon grease from the skillet. Drain the rest of the grease.
Return the reserved bacon grease and the bacon pieces to the skillet.
Add in the sliced onions and stir to combine, making sure all of the onions become coated in the grease and bacon pieces.
Cook until the onions soften, about 2-3 minutes.
Add in the maple syrup, brown sugar, Worcestershire sauce, thyme leaves, and beef stock. Stir until the sugars dissolve.
Allow the mixture to cook until it thickens into a jam-like consistency and the onions have a deep golden color.
Serve warm or chilled from the refrigerator!
