Preheat the oven to 350 degrees F.
Line an 8-inch square baking dish with parchment paper.
Chop the chocolate into chunks.
In a microwave-safe bowl, melt 1/2 of the chocolate in the microwave, heating it in 20-second intervals and stirring between intervals.
In a large bowl, mix the butter and sugar using an electric hand mixer until thoroughly combined.
Add in the eggs and vanilla and beat until the mixture is fluffy and light, for about 1-2 minutes.
Slowly whisk in the melted chocolate, making sure it is not too hot to prevent scrambling the eggs.
Sift in the flour, cocoa powder, and salt, and fold them into the wet ingredients as gently as possible. Overmixing will ruin the fudgy texture of the brownies.
Fold in the unmelted chocolate chunks.
Transfer the batter to the prepared baking dish.
Bake until the brownies reach your desired level of doneness, about 20-25 minutes.
Allow it to cool completely before serving.
