Ingredients
• 1/4 cup olive oil • 2 tablespoons lime juice • 1 tablespoon fresh cilantro, minced • 2 cloves garlic, minced • 1/2 teaspoon coarse salt • 1/4 teaspoon black pepper • 1/4 teaspoon paprika • 1/4 teaspoon chili powder • red chili pepper flakes, to taste • 1 pound jumbo shrimp, peeled and deveined • 1/2 fresh pineapple, cored, halved, and thinly slicedDirections
Preheat a grill to medium heat.
In a large bowl or a large resealable plastic bag, add the olive oil, lime juice, cilantro, garlic, salt, pepper, paprika, chili powder, and red pepper flakes.
Add the shrimp and toss until coated.
Cover the bowl or seal the bag and allow to marinate for at least 30 minutes.
Soak eight wooden kabob skewers in water for at least 30 minutes.
Transfer the shrimp from the marinade, shaking off any excess and reserving the remaining marinade.
Thread the shrimp and pineapple onto the soaked skewers as desired.
Place the skewers on the grill and brush with the reserved marinade.
Cover and cook, flipping and brushing with the marinade halfway through until the shrimp is pink and cooked through at 145 degrees F, about 2-3 minutes per side.
Serve.
