Tropical Shrimp Skewers

Tropical Shrimp Skewers grill up pink, juicy, and tender shrimp coated in a smoky and fragrant marinade with notes of sunny citrus. • 1/4 cup olive oil • 2 tablespoons lime juice • 1 tablespoon fresh cilantro, minced • 2 cloves garlic, minced • 1/2 teaspoon coarse salt • 1/4 teaspoon black pepper • 1/4 teaspoon paprika • 1/4 teaspoon chili powder • red chili pepper flakes, to taste • 1 pound jumbo shrimp, peeled and deveined • 1/2 fresh pineapple, cored, halved, and thinly sliced


Step 1

Preheat a grill to medium heat.

Step 2

In a large bowl or a large resealable plastic bag, add the olive oil, lime juice, cilantro, garlic, salt, pepper, paprika, chili powder, and red pepper flakes.

Step 3

Add the shrimp and toss until coated.

Step 4

Cover the bowl or seal the bag and allow to marinate for at least 30 minutes.

Step 5

Soak eight wooden kabob skewers in water for at least 30 minutes.

Step 6

Transfer the shrimp from the marinade, shaking off any excess and reserving the remaining marinade.

Step 7

Thread the shrimp and pineapple onto the soaked skewers as desired.

Step 8

Place the skewers on the grill and brush with the reserved marinade.

Step 9

Cover and cook, flipping and brushing with the marinade halfway through until the shrimp is pink and cooked through at 145 degrees F, about 2-3 minutes per side.
