2 pounds hot breakfast sausage
1 (30-32 ounce) bag frozen tater tots
1 1/2 cups cheddar cheese, shredded
1/2 cup mozzarella cheese, shredded
8 eggs
1 teaspoon salt
1/2 teaspoon pepper
1/4 teaspoon onion powder
1/4 teaspoon garlic powder
2 cups milk


Step 1

Preheat the oven to 350 degrees F.

Step 2

Gently grease a 9x13-inch oven-safe baking pan or sheet pan with cooking spray or butter.

Step 3

Cook the sausage until it is no longer pink in a separate pan or skillet, about 5 minutes.

Step 4

Drain off the fat when the sausage is done cooking.

Step 5

In a large mixing bowl, toss together the tater tots, the cooked sausage, the cheddar cheese, and the mozzarella cheese.

Step 6

Pour the mixture into the prepared pan.

Step 7

Whisk together the eggs, salt, pepper, onion powder, garlic powder, and milk.

Step 8

Pour the egg mixture over the tater tots.

Step 9

Bake the dish uncovered until the eggs are set, about 60-70 minutes.
