Summer Shrimp Alfredo

Pasta is already one of the best comfort foods in the world. Once you add shrimp and alfredo to the party, it’s a game-changer. Summer Shrimp Alfredo tastes like the warm sunshine on the beach, with delicate and sweet shrimp swimming in a rich, creamy sauce. With olive oil, garlic, and parmesan flavors, the Summer Shrimp Alfredo bounces with joy on the tongue! You’ll be beaming as you eat this!


Ingredients

3/4 pound fettuccine or penne pasta
1 pound shrimp, peeled and deveined
salt, to taste
pepper, to taste
paprika, to taste
1 tablespoon oil
2 tablespoon butter
1 small onion, finely chopped
1 garlic clove
1/3 cup white wine
2 cups heavy whipping cream
1/3 cup parmesan cheese, grated
parsley or basil, optional, for garnish, if desired

Directions

Step 1

Cook the pasta according to the instructions on the package.

Step 2

Drain the noodles, but don't rinse them.

Step 3

Season the shrimp with salt, pepper, and paprika.

Step 4

Heat a large skillet over medium-high heat. Add 1 tablespoon of oil.

Step 5

Once the oil has heated, place the shrimp into the pan in one layer. Cook for about 1-2 minutes on each side. The shrimp should look pink and white with no translucency.

Step 6

Place the shrimp in a separate bowl and set aside.

Step 7

Using the same pan, add 2 tablespoons of butter and the chopped onion. Sauté until the onions look golden brown, about 6 minutes.

Step 8

Add the garlic and cook while stirring until fragrant, about 1 minute.

Step 9

Stir in the white wine and reduce until about 1/4 of the mixture remains, scraping the brown bits off of the bottom of the pan.

Step 10

Stir the cream into the pan and allow it to simmer for 2 minutes.

Step 11

Sprinkle the parmesan on top of the cream.

Step 12

Stir the mixture until creamy and smooth, then remove from the heat.

Step 13

Add in paprika, salt, and pepper to taste.

Step 14

Stir in the cooked shrimp and drained pasta.

Step 15

Serve with parsley, basil, and parmesan for garnish!
