Ingredients

4 chicken breasts
salt, to taste
1 tablespoon cumin
8 ounces corn, drained
1 (15 ounce) can black beans, drained and rinsed
1 tablespoon chili powder
4 ounces cotija or feta cheese, crumbled
3 green onions, optional, chopped

Directions

Step 1

Preheat the oven to 375 degrees F.

Step 2

Add the chicken breasts to a medium casserole dish.

Step 3

Top with the salt and cumin.

Step 4

Add the corn, black beans, and chili powder.

Step 5
