For the grits: • 15 ounces of seafood stock • 1/2 cup white wine • 1/2 cup water • 1/2 teaspoon kosher salt • 1 cup grits • 3 tablespoons heavy cream • 3 tablespoons unsalted butter • 2 cups sharp cheddar cheese, shredded For the shrimp: • 2 tablespoons olive oil • 1 pound large shrimp, shelled, deveined • 1/4 teaspoon black pepper • 3 cloves garlic, minced • 1 tablespoon flat-leaf parsley, chopped • 1 teaspoon smoked paprika • 1 teaspoon Worcestershire sauce • hot sauce, to taste • 4 teaspoons lemon juice


Step 1

In a medium saucepan, combine the seafood stock, white wine, water, and salt.

Step 2

Place the saucepan over medium-high heat and bring the mixture to a boil.

Step 3

Add the grits and cook, stirring periodically, until thickened and tender, about 5-10 minutes.

Step 4

Add the cream, butter, and cheese, and gently stir.

Cover and remove the saucepan from the heat.

Step 6

In a large skillet over medium-high heat, heat the oil.

Coat the shrimp with black pepper.

Add the shrimp to the skillet and cook until they begin to turn golden-brown, for about 3 minutes.

Add the garlic, parsley, paprika, Worcestershire sauce, hot sauce, and lemon juice and cook until a sauce forms and the shrimp are cooked through at 145 degrees F, about 2-3 minutes.

Step 10

Scoop the grits into serving bowls.

Top with the shrimp and sauce and serve.
