Slow Cooker Carnitas is the recipe for the taco night of your dreams! Combine all the ingredients in a slow cooker and you’ll come home from work to the delicious, spicy smells of a Mexican restaurant. Top your tortillas with the tender, seasoned pork, and add your favorite veggies for a refreshing crunch! Slow Cooker Carnitas will become a staple for Taco Tuesday, or any night when you’re in the mood for some robust Mexican flavors!


• 1 1/2-2 pounds pork tenderloins • 1 medium onion, peeled and sliced • 1 fresh jalapeno pepper, seeded and sliced • 4 slices orange rind, optional, from half an orange • 1 (12 ounce) cans cola soda • 16 large flour or corn tortillas • guacamole, optional, for topping avocado, optional, for topping • tomato, optional, for topping • onion, optional, for topping • lettuce, optional, for topping • jalapenos, optional, for topping • fresh cilantro, optional, for topping • cabbage, optional, for topping • lime juice, optional, for topping • salt, to taste • pepper, to taste


Step 1

Combine the pork, onion, orange peel, and soda in a slow cooker.

Step 2

Cover and cook on low for 8 hours.

Step 3

Uncover and shred the meat using 2 forks.

Step 4

Serve on flour tortillas and top with your desired toppings.
