Sizzlin' Chicken Fajitas
Time: 30 minutes
Yield: 6 servings
When you order fajitas in a restaurant, you can hear them coming before they even make it to your table–a celebratory entrance, if you will. But when you make Sizzlin' Chicken Fajitas at home, you get to experience that joyful noise plus all the delicious aromas from beginning to end–starting with sautéed chicken marinated in all the Tex-Mex favorites: lime juice, cumin, garlic, and salt. Tossed together with some sweet onions, spicy salsa, and crunchy peppers, your eyes will enjoy the colorful goodness as much as your taste buds do. Served in a fluffy tortilla and topped with cheddar cheese, Sizzlin' Chicken Fajitas are a tasty event for all of your senses!
In a medium bowl, mix the lime juice, garlic, chili powder, salt, ground cumin, and 1 tablespoon of olive oil.
Add the lime mixture to the chicken and toss to coat.
Let the chicken stand for 15 minutes.
In a large nonstick skillet, heat the remaining olive oil over medium-high heat.
Sauté the onions, red peppers, yellow peppers, and green peppers until they are crisp and tender, about 5-7 minutes.
Transfer the onions and the peppers from the pan.
In the same skillet, sauté the chicken mixture until it is no longer pink, about 3-4 minutes.
Stir the salsa and the pepper mixture into the chicken mixture until it is heated through and the chicken is cooked at 165 degrees F, about 3-4 minutes.
Serve the fajitas in the flour tortillas, sprinkled with cheese.
