Ingredients

2 tablespoons oil
1 medium onion, chopped
2 cloves garlic, minced
coarse salt, to taste
pepper, to taste
1 1/2 teaspoons dried thyme or oregano
1 (28 ounce) can whole tomatoes
1 (28 ounce) can crushed tomatoes
2 pounds store-bought cheese ravioli
1 1/2 cups mozzarella cheese, shredded
1/2 cup parmesan cheese, grated

Directions

Step 1

Preheat the oven to 425 degrees F.

Step 2

Heat the oil in a large saucepan over medium-high heat.

Step 3

Add the onion and garlic, seasoning both with salt and pepper.

Step 4

Cook until the onions are softened, about 5 minutes. Stir constantly to prevent the garlic from burning.

Step 5

Add the thyme, whole tomatoes, and crushed tomatoes.

Step 6

Bring the mixture to a boil.

Step 7

Reduce the heat and allow the mixture to simmer, breaking up the tomatoes with a spoon.

Step 8

Reduce the sauce to about 5 cups, about 20-25 minutes.

Step 9

Cook the ravioli in a pot of boiling water just until they float. Drain the ravioli.

Step 10

Toss the sauce and ravioli together in a casserole dish.

Step 11

Top the ravioli with the mozzarella and parmesan cheese.

Step 12

Bake for 20-25 minutes.

Step 13

Serve hot!
