Ingredients
• 1 pound ground pork • 1 medium onion, chopped • 2 medium carrots, chopped • 3 cups potatoes, diced and cooked • 1/2 teaspoon salt • 1/4 teaspoon pepper • 2-4 eggsDirections
Step 1
In a cast-iron skillet, cook the pork over medium heat until it’s no longer pink, about 5-7 minutes.
Step 2
Add the onion and carrots, cooking until the onions are translucent and the carrots are tender, about 5 minutes.
Step 3
Stir in the potatoes.

Season with the salt and pepper.

Reduce the heat to low.

Cook until the potatoes are crispy.

Top with eggs.
