Dry the pork shoulder on all sides with a paper towel.
Trim the excess fat from the pork.
Using a sharp knife, score the meat in a criss-cross pattern.
Combine the garlic, rosemary, thyme, olive oil, kosher salt, sugar, and black pepper in a bowl.
Apply the spice rub marinade on all sides of the pork and allow the pork to sit out to marinate for 3-4 hours, or cover and let marinate in the refrigerator overnight.
Preheat the oven to 275 degrees F.
Place the roast in a roasting pan or on a baking sheet lined with plenty of aluminum foil.
Roast the pork until the internal temperature reaches 170 degrees F, about 3-4 hours. Each pound of pork adds about 25-30 minutes of roasting time.
Remove the roast from the oven and allow it to rest uncovered for another 30 minutes. The temperature should rise about 5-10 degrees while it rests.
Slice or shred to serve warm.
