Quick Pad Thai

We've all had that sudden craving for Pad Thai before realizing it would take an hour to arrive or, worse, that the restaurant closes in thirty seconds. Quick Pad Thai ensures that you can always satisfy your desires, and even in a hurry to boot! It still has everything you'd want from a great pad thai: tender noodles soaking up a light, savory, and sweet sauce with notes of garlic, lime, and chili heat. Mixed with juicy pork strips and topped with crunchy peanuts, Quick Pad Thai's incredible flavor will speed its way onto your plate and into your heart.
Cook the noodles according to the package directions.
In a large nonstick skillet or wok, heat the canola oil over high heat.
Add the pork and stir-fry until lightly browned, about 3-4 minutes. Transfer the pork to a plate.
In the same skillet, add the shallots and cook until tender, about 1 minute.
Add the garlic and cook until fragrant, about 30 seconds.
Make a well in the center of the shallot mixture. Add the egg to the well. Stir fry until the egg is completely set, about 1-2 minutes.
Add the coleslaw mix, green onions, vinegar, sugar, soy sauce, fish sauce, chili garlic sauce, lime juice, and peanuts, cooking until heated through.
Return the pork to the pan and heat through, ensuring it is cooked through at 145 degrees F internally.
Drain the noodles and toss them with the pork mixture.
Serve with cilantro, lime wedges, additional peanuts, and bean sprouts.
