Queso Chicken Bake

Your favorite dip just became dinner. Delicious, melty queso with black beans, corn, and diced tomato over chicken breast makes a weeknight meal you can look forward to. With just five simple ingredients in one casserole dish, Queso Chicken Bake is an easy choice. Serve Queso Chicken Bake with rice and refried beans, chips, or tortillas for a well-rounded meal!


4 chicken breasts, boneless and skinless,
1 can corn, drained
1 can black beans, drained and rinsed
1 can tomatoes, diced
16 ounces queso cheese


Step 1

Preheat the oven to 375 degrees F

Step 2

Put the chicken into a baking dish. If the breasts are thick, cut the breasts butterfly style.

Step 3

Layer on the corn, the black beans, and the tomatoes on the chicken.

Step 4

Dice the queso cheese into 1/2-inch cubes and then spread them out evenly all over the top of the dish.

Step 5

Cover the dish with aluminum foil and bake it until the chicken juices run clear, about 45 to 55 minutes.

Step 6

Take the dish out from the oven and use a fork or whisk to work any extra cheese into the juices to form more queso sauce.

Step 7

Serve hot!
