Possum Pie "plays possum" by hiding all of its creamy layers behind fluffy whipped cream and crunchy, nutty pecans. Those layers of cream cheese filling and chocolatey pudding—nestled atop a crumbly and rich graham cracker crust—are so sweet and smooth you'll wonder why anyone would want to hide them in the first place! As the unofficial state treat of Arkansas, Possum Pie will surprise you, not just with its filling but also with how quickly it becomes a favorite. It's possum (pronounced like awesome)!


6 ounces cream cheese, softened
3/4 cup confectioners' sugar
1 (9-inch) graham cracker crust
1/4 cup pecans, chopped
1 3/4 cups milk, cold
3/4 teaspoon vanilla extract
1/4 cup instant vanilla pudding mix
1/3 cup instant chocolate pudding mix
1/2 cup heavy whipping cream, whipped
12 pecan halves, plus more as desired


Step 1

In a small bowl, beat the cream cheese and the confectioners' sugar until smooth.

Step 2

Spoon the cream cheese mixture into the graham cracker crust.

Step 3

Sprinkle the cream cheese mixture with the chopped pecans.

Step 4

In a bowl, whisk together the milk, vanilla, vanilla pudding mix, and chocolate pudding mix.

Step 5

Let the pudding mixture stand until soft-set, about 2 minutes.

Step 6

Spoon the pudding mixture over the pecans.

Step 7

Refrigerate until set, about 4 hours.

Step 8

Top with whipped cream and pecan halves.
