Ingredients

1 cup sushi rice, short-grain and uncooked
1/2 cup cider vinegar
1 tablespoon sugar
1 small red onion, thinly sliced
1/3 cup mayonnaise
4 teaspoons sriracha chili sauce
1 pound chicken breast, boneless and skinless
2 tablespoons reduced-sodium soy sauce
2 teaspoons toasted sesame oil
1 teaspoon honey
1 medium ripe avocado, peeled and sliced
1/2 small cucumber, thinly sliced
1 cup alfalfa or bean sprouts
green onions, to taste, sliced

Directions

Step 1

Cook the rice per package instructions.

Step 2

Whisk together vinegar and sugar until dissolved.

Step 3

Add red onions to the vinegar mixture.

Step 4

Place the red onion mixture in a sealable jar and refrigerate for 30 minutes.

Step 5

Stir together the mayonnaise and chili sauce.

Step 6

Refrigerate the sriracha mayo and cover.

Step 7

Toss the chicken, soy sauce, sesame oil, and honey in a large skillet or wok.

Step 8

Cook over medium-low heat until the chicken is cooked through at 165 degrees F, about 5-6 minutes per side.

Step 9

Shred the chicken.

Step 10

Place the rice into 4 servings bowls.

Step 11

Add it to a bowl on top of the rice along with avocado, cucumber, sprouts, pickled onions, spicy mayonnaise, and green onions.

Step 12

Serve.
