Preheat the oven to 475 degrees F.
Line a baking tray with foil and brush lightly with olive oil, then set it aside.
Using a food processor, pulse the peanuts and bread together until it is coarsely ground.
Transfer the processed mixture to a wide-rimmed mixing bowl.
Mix in the olive oil, about 1 1/2 teaspoons of the salt, and 1/4 teaspoon of the pepper.
Using a large mixing bowl, whisk in the eggs, and season generously with salt and pepper.
Add the chicken breast halves to the egg mixture, turning to coat each of the sides.
Doing one at a time, dredge the chicken halves in the peanut breading, lightly pressing it onto the chicken.
Transfer the breaded chicken to the prepared baking tray.
Bake the breaded chicken until it is lightly browned and golden, about 15 minutes.
Check the internal temperature of the chicken to make sure the internal temperature is 165 degrees F.
Serve!
