Asian Cucumber Salad showcases the juicy, refreshing flavor of cucumbers and contrasts it with the sweet and crunchy nuttiness of honey-roasted peanuts. Each bite of the salad is coated in a garlicky, tangy, and savory Asian-inspired dressing that will have you coming back for more. Ingredients

• 6 Persian or Japanese cucumbers • 1/2 cup honey-roasted peanuts, chopped • 1/2 cup rice vinegar • 1 teaspoon sesame oil • 1 teaspoon reduced-sodium soy sauce • 2 teaspoons garlic, minced • 1 teaspoon sugar • crushed red pepper flakes, optional, for serving

Directions

Step 1

Slice the cucumbers into 1/4-inch-thick slices.

Transfer the cucumber pieces into a bowl.
