In a large cast-iron or heavy skillet, over medium heat, melt the butter.
Add the pork chops to the butter and brown on both sides, about 3 minutes per side.
Transfer the pork chops from the pan and reserve the drippings in the skillet.
In the same skillet, over the same heat, saute the potatoes, carrots, and onion in the reserved drippings until lightly browned, about 5-7 minutes.
In a small bowl whisk together the cream of mushroom soup and water.
Stir the soup mixture into the vegetables and bring to a boil.
Reduce the heat to a simmer and cover with a lid. Cook the vegetables until they are tender, about 15-20 minutes.
Add the pork chops to the vegetable mixture.
Cook the dish, covered, until an instant thermometer inserted in the pork reads 145 degrees F, about 8-10 minutes.
Transfer the skillet away from the heat and let it stand for 5 minutes.
Sprinkle the pork chops and the vegetables with the pepper and the parsley.
Serve.
