In a 5 quart dutch oven, cook the Italian sausage and onion, stirring occasionally, until the onion is tender and the sausage is brown, about 8 to 10 minutes over medium heat.
Drain the dutch oven.
Stir in the chicken broth, pepper, diced tomatoes, desired herbs, and lasagna noodles.
Heat the soup to a boil.
Reduce the heat, cover, and let simmer for 10 minutes, stirring occasionally, until the pasta is tender.
Top with parmesan, ricotta cheese, and your favorite spices and herbs.
Serve warm!
