Preheat the oven to 350 degrees F.
Add the graham cracker crumbs, butter, and 1/4 cup of the sugar together in a mixing bowl, combining until a sandy mixture forms.
Press the crust mixture into the bottom of a 9-inch springform pan.
Beat in the cream cheese and the remaining 1 cup of the sugar into a large mixing bowl using a hand mixer until it is completely blended.
Add in the sour cream and vanilla, mixing well.
Add in the eggs one at a time, beating them at a low speed after every egg is added until just mixed.
Pour the custard over the crust.
Bake until the center of the cheesecake is barely set, about 1 hours-1hr 10 minutes.
Run a knife around the rim of the pan to loosen the cake and allow it to cool before removing the rim of the springform.
Refrigerate the cheesecake for about 4 hours to completely set it.
Garnish the cheesecake with the cherry pie filling before serving.
