Ingredients

1 cup butter, softened
2 cups sugar
2 large eggs, room temperature
2 teaspoons lemon zest, grated
2 teaspoons lemon extract
4 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 cup buttermilk

Directions

Step 1

Beat together the butter and sugar until light and fluffy.

Step 2

Add the eggs one at a time, beating well each time before adding the next one.

Step 3

Beat in the lemon zest and extract.

Step 4

Whisk together the flour, baking soda, and salt in a separate large bowl.

Step 5

Add the butter mixture and the buttermilk into the bowl with the dry ingredients mixture, alternating between them and adding about 1/3 of each at a time.

Step 6

Cover and refrigerate the bowl until the dough’s gluten relaxes and the butter solidifies, about 1 hour 45 minutes.

Step 7

Preheat the oven to 375 degrees F.

Step 8

Drop the cookie batter on an ungreased baking sheet by the tablespoonfuls, making sure the cookies will have enough room to spread out as they bake.

Step 9

Bake until lightly browned, about 7-10 minutes.

Step 10

Cool completely.

Step 11

Serve.
