Grease a 9x13-inch baking dish.
Cut the bread into 1-inch thick slices.
Arrange the bread slices in a single layer in the prepared baking dish.
Lightly beat the eggs, sugar, 1 tablespoon brown sugar, vanilla extract, maple extract, and kosher salt.
Stir in the milk and cream.
Pour the egg mixture over the bread, turning the slices once to coat.
Refrigerate, covered, for at least 8 hours and up to overnight.
Preheat the oven to 375 degrees F.
Turn the bread again to coat the slices in the sauce.
Combine the flour, remaining brown sugar, butter, cinnamon, and nutmeg.
Sprinkle the topping mixture over the bread.
Bake, uncovered, until a knife inserted into the center comes out clean and the topping is golden brown, about 40-45 minutes.
Let the french toast stand for 10 minutes before cutting.
