Mojo Pork

This pork will put a spell on you. Mojo Pork has the magic touch that makes dinner truly enchanting; the pork is savory, juicy, and seared to a lovely golden brown, marinated in a citrus-bright, garlic-infused, and herby concoction that will leave you feeling positively charmed. Mojo Pork does take a little patience to get the best tasting results, but just take a bite and you'll know it's worth it. Sunday dinner just got spellbinding.


3/4 cup extra-virgin olive oil
1 tablespoon orange zest
3/4 cup fresh orange juice
1/2 cup fresh lime juice
1 cup cilantro, finely chopped
1/4 cup lightly packed mint leaves, finely chopped
8 cloves garlic, minced
1 tablespoon fresh oregano, minced, or 2 teaspoons dried oregano
2 teaspoons ground cumin
kosher salt, to taste
pepper, to taste
3 1/2 pounds pork shoulder, boneless and in one piece


Step 1

In a large resealable bag, combine the olive oil, orange zest, orange juice, lime juice, cilantro, mint, garlic, oregano, and cumin, shaking the bag to combine the mixture.

Step 2

Add the pork shoulder to the bag and massage lightly so every part of the pork is exposed to the marinade.

Step 3

Place the bag in a baking dish and place the baking dish in the fridge to marinate for at least 3 hours and up to overnight.

Step 4

Preheat the oven to 425 degrees F.

Step 5

Place a wire rack over a rimmed baking sheet.

Step 6

Place the pork on the rack.

Step 7

Season the pork with salt and pepper.

Step 8

Roast until the pork is lightly browned, about 30 minutes.

Step 9

Reduce the oven temperature to 375 degrees F.

Step 10

Roast the pork until it reaches an internal temperature of 160 degrees F, about 1 hour and 20 minutes.

Step 11

Transfer the pork to a cutting board and let it rest for at least 20 minutes.

Step 12

Slice the pork against the grain and serve!
