In a large resealable bag, combine the olive oil, orange zest, orange juice, lime juice, cilantro, mint, garlic, oregano, and cumin, shaking the bag to combine the mixture.
Add the pork shoulder to the bag and massage lightly so every part of the pork is exposed to the marinade.
Place the bag in a baking dish and place the baking dish in the fridge to marinate for at least 3 hours and up to overnight.
Preheat the oven to 425 degrees F.
Place a wire rack over a rimmed baking sheet.
Place the pork on the rack.
Season the pork with salt and pepper.
Roast until the pork is lightly browned, about 30 minutes.
Reduce the oven temperature to 375 degrees F.
Roast the pork until it reaches an internal temperature of 160 degrees F, about 1 hour and 20 minutes.
Transfer the pork to a cutting board and let it rest for at least 20 minutes.
Slice the pork against the grain and serve!
