MeMaw's Homemade Tuna Patties are her favorite, a crispy on the outside, juicy and savory on the inside patty of seafood flavor. The interior is creamy, tangy, and with just a touch of sweetness for maximum satisfaction. MeMaw's Homemade Tuna Patties are fantastic as a lunch or dinner served alongside fries or a fresh salad. It certainly beats your typical tuna fish dish!
Ingredients• 2 tablespoons butter • 3 tablespoons all-purpose flour • 1 cup evaporated milk • 1 (6.4-ounce) pouch light tuna in water • 1/3 cup plus 1/2 cup dry bread crumbs, divided • 1 green onion, finely chopped • 2 tablespoons lemon juice • 1/2 teaspoon salt • 1/4 teaspoon pepper • oil, neutral-flavored, to taste, for frying
In a small saucepan, melt the butter over medium heat.
Stir in the flour until smooth and the raw flour smell dissipates, for about 2 minutes.
Gradually whisk in the milk.
Bring the mixture to a boil, stirring constantly.
Cook until thickened, about 2-3 minutes.
Remove the mixture from the heat and transfer it to a small bowl. Allow the milk mixture to cool.
Stir in the tuna, 1/3 cup bread crumbs, green onion, lemon juice, salt, and pepper.
Cover the bowl and refrigerate for at least 30 minutes.
Place the remaining 1/2 cup breadcrumbs in a shallow bowl.
Drop 1/3 cup of the tuna mixture into the crumbs.
Gently coat the tuna and shape it into a 1/2-inch thick patty.
Repeat with the remaining tuna.
Heat the oil in a large skillet over medium heat.
Add the tuna patties to the hot oil in batches and cook until golden brown and cooked through, about 2-3 minutes per side.
Drain the patties on paper towels.
