MeeMaw just loves a good tuna burger, whether served on a bun or eaten like a crab cake. MeMaw's Homemade Tuna Patties are her favorite, a crispy on the outside, juicy and savory on the inside patty of seafood flavor. The interior is creamy, tangy, and with just a touch of sweetness for maximum satisfaction. MeMaw's Homemade Tuna Patties are fantastic as a lunch or dinner served alongside fries or a fresh salad. It certainly beats your typical tuna fish dish!

• 2 tablespoons butter • 3 tablespoons all-purpose flour • 1 cup evaporated milk • 1 (6.4-ounce) pouch light tuna in water • 1/3 cup plus 1/2 cup dry bread crumbs, divided • 1 green onion, finely chopped • 2 tablespoons lemon juice • 1/2 teaspoon salt • 1/4 teaspoon pepper • oil, neutral-flavored, to taste, for frying

In a small saucepan, melt the butter over medium heat.

Gradually whisk in the milk.

Bring the mixture to a boil, stirring constantly.

Step 5

Cook until thickened, about 2-3 minutes.

Step 6

Remove the mixture from the heat and transfer it to a small bowl. Allow the milk mixture to cool.

Step 7

Stir in the tuna, 1/3 cup bread crumbs, green onion, lemon juice, salt, and pepper.

Step 8

Cover the bowl and refrigerate for at least 30 minutes.

Step 9

Place the remaining 1/2 cup breadcrumbs in a shallow bowl.

Step 10

Drop 1/3 cup of the tuna mixture into the crumbs.

Step 11

Gently coat the tuna and shape it into a 1/2-inch thick patty.

Step 12

Repeat with the remaining tuna.

Step 13

Heat the oil in a large skillet over medium heat.

Step 14
