Lemon Cod

• 3 tablespoons lemon juice • 3 tablespoons butter, melted • 1/4 cup all-purpose flour • 1/2 teaspoon salt • 1/4 teaspoon paprika • 1/4 teaspoon lemon pepper seasoning • 4 (6-ounce) cod filets • 2 tablespoons fresh parsley, minced • 2 teaspoons lemon zest, grated


Step 1

Preheat the oven to 400 degrees F.

Step 2

Coat a 9x13-inch baking dish with cooking spray.

Step 3

In a shallow bowl, mix the lemon juice and butter.

Step 4

In a separate shallow bowl, mix the flour, salt, paprika, and lemon pepper seasoning.

Step 5

Dip the filets in the lemon juice mixture and then in the flour mixture to coat both sides. Shake off the excess.

Step 6

Place the filets in the prepared baking dish.

Step 7

Drizzle the cod with the remaining lemon juice mixture.

Step 8

Bake until the fish has just begun to flake easily with a fork and it is cooked through at 145 degrees F, about 12-15 minutes.

Step 9

Turn on the broiler and broil until golden brown, about 2-3 minutes. Keep a close eye on it so it doesn't burn.

Step 10

Mix the parsley and lemon zest.

Step 11

Sprinkle the parsley mixture over the fish.
