Layered Tortilla Pie

The layers of a casserole and the flavors of a taco come together to create something more than the sum of its parts... and its parts were already pretty amazing! Layered Tortilla Pie is stacked with favorites like juicy, savory taco meat, tortillas, creamy cheese sauce, and a melty topping of even more cheese (because you can never have enough cheese). Layered Tortilla Pie comes together in half an hour or less, so it has the heartiness of a casserole and the speed of a plate of high-quality nachos. This is lavishness in layered form!

Preheat the oven to 400 degrees F.
Coat a 9-inch round baking pan with cooking spray.
In a large skillet, cook and crumble the beef, onion, and garlic over medium heat until the meat is no longer pink, about 4-6 minutes.
Stir in the chili powder, cumin, and tomatoes.
Bring the mixture to a boil.
Transfer the skillet from the heat.
In a small bowl, mix the ricotta, mozzarella, and 2 tablespoons of cilantro.
Place 1 tortilla in the prepared baking pan.
Layer, in this order, 1/2 of the meat sauce mixture, 1 tortilla, the ricotta mixture, 1 tortilla, and the remaining meat sauce.
Top with the remaining tortilla.
Sprinkle the top with the cheddar cheese and remaining cilantro.
Bake covered until heated through, about 15-20 minutes.
Serve.
