Absurd! Unprecedented! Delicious! Impossible Tots seem and taste unbelievable because they don't feature potatoes or frying! Instead, these crispy snacks are filled with zucchini and carrots and are baked to achieve a delightful crunch. Filled with sharp and creamy feta cheese, Impossible Tots are a guilt-free alternative to tater tots that you can make in less than half an hour. They're not impossible, just that amazing!


Ingredients

1 cup zucchini, grated
1/4 cup carrot, grated
1/4 cup seasoned bread crumbs
1/4 cup feta cheese, crumbled
1/4 cup fresh basil, chopped
1 egg
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1/8 teaspoon dried oregano

Directions

Step 1

Preheat the oven to 400 degrees F.

Step 2

Spray a mini-muffin tin with cooking spray.

Step 3

Combine the zucchini and carrot in a large bowl, squeezing out any excess water with a paper towel.

Step 4

Add the breadcrumbs, feta cheese, basil, egg, salt, black pepper, and oregano into the zucchini-carrot mixture.

Step 5

Scoop the mixture using spoons or a mini ice cream scoop into the prepared muffin tin.

Step 6

Press each scoop into its muffin cup with the back of a spoon.

Step 7

Bake until the tops are golden brown, about 15-18 minutes.

Step 8

Serve hot.
