In a small saucepan, combine the cider vinegar, orange juice, honey, brown sugar, chili powder, cumin, and coriander.
Bring the mixture to a boil over the stove-top, then reduce heat and let simmer until the sauce has been reduced to about 1 cup, about 35-45 minutes.
In a medium-sized saucepan, add the olive oil and set to medium-high heat.
Salt and pepper the chicken thighs and cook until 165 degrees F in the center, or until no longer pink.
Pour the glaze on top and let simmer for 1-2 minutes, making sure the chicken is well coated with the glaze.
