Ingredients
• 1 1/2 cups strawberries, diced • 2 tablespoons honey • 1/2 cup granulated sugar • 1 teaspoon lemon juice • 1 cup heavy whipping cream • 1/2 cup half and half • 1 teaspoon vanilla extractDirections
Mix the diced strawberries, honey, sugar, and lemon juice in a large bowl.
Allow the mixture to sit for 20 minutes, during which the strawberries will release their juices in the mixture.
Use a masher or fork to mash the mixture until strawberry pieces are broken up. A few larger pieces are fine.
Add the heavy whipping cream, half and half, and vanilla extract to the mixture until just combined.
Pour the mixture into an ice cream maker, and follow the instructions on your machine.
Serve once churned or allow the ice cream to freeze for a few hours to thicken.
