4 tablespoons garlic, minced
2 tablespoons olive oil
1 teaspoon thyme, dried
1 teaspoon rosemary, dried
1/2 teaspoon kosher salt
1/2 teaspoon pepper
2 pounds pork tenderloin
4 tablespoons dijon mustard


Step 1

Preheat the oven to 425 degrees F. Then, using non-stick foil, line a rimmed baking sheet.

Step 2

In a small bowl, combine the olive oil, garlic, rosemary, thyme, salt, and pepper. Set aside.

Step 3

Brush the tenderloins with the dijon mustard and then rub them with the herb mixture.

Step 4

Set the pork on the prepared baking sheet. Roast in the oven until the crust is golden brown and an instant-read thermometer inserted into the center reads 160 degrees F, about 30 minutes.

Step 5

Allow the pork to rest for 5 minutes before slicing and serving.
