Ingredients
• 2 tablespoons extra virgin olive oil • 1 pound extra-lean ground turkey • 1 teaspoon garlic, minced • 1/2 cup yellow pepper, diced • 1/2 cup onions, diced • 1 1/2 cups sweet potato, diced • red chili flakes, optional, to taste • salt, to taste • freshly ground black pepper, to taste • 1/2 cup mozzarella cheese, optional, shredded • fresh parsley, optional, for garnishDirections
Heat a cast-iron skillet over medium-high heat. Add the olive oil and heat until the oil starts to shimmer.
Add the ground turkey and garlic to the skillet and use a wooden spoon to break up the turkey as it cooks.
Cook for about 5 minutes, stirring occasionally.
Add the yellow peppers and onions and cook until the onions are translucent, about 5 minutes.
Add the sweet potato, red chili flakes, salt, and pepper.
Put a lid on the skillet and continue to cook until the sweet potatoes are fork tender, continuing to stir occasionally, about 10-15 minutes.
Preheat the oven to 400 degrees F.
When the sweet potatoes are fork tender, sprinkle the mozzarella cheese evenly in the skillet.
Place the skillet in the oven until the cheese is melted, about 5-7 minutes.
Garnish with parsley and serve.
