Chicken shawarma is one of the best preparations of chicken ever devised: the meat is slathered in a rich, tangy, aromatic marinade and cooked to a juicy, gorgeous golden brown. Grilled Chicken Shawarma Kebab speeds up the process of getting that incredible chicken to your tastebuds, cooking up the chicken on the grill to ensure beautiful coloring and savory flavor. With a homemade garlicky tahini sauce, Grilled Chicken Shawarma Kebab is a fantastic meal whether you serve it with pita bread and tzatziki sauce, couscous, or on its own as part of a summer cookout!


Ingredients

For the chicken:
3 pounds of chicken thighs, boneless, skinless
1 cup plain Greek yogurt
2 teaspoons cumin
2 teaspoons cardamom
2 teaspoons turmeric
2 teaspoons cinnamon
2 teaspoons salt
For the tahini sauce:
1 cup tahini
1/2 cup lemon juice
4 cloves garlic, minced
1 cup water
1 teaspoon salt
For the garnish:
parsley, optional

Directions

Step 1

Cut the chicken into 1-inch pieces.

Step 2

In a large bowl, combine the yogurt, cumin, cardamom, turmeric, cinnamon, and 2 teaspoons of salt.

Step 3

Add the chicken to the bowl and toss until the chicken is evenly coated in the marinade.

Step 4

Cover and refrigerate the chicken for 1 hour.

Step 5

Tightly skewer the meat on soaked bamboo or metal skewers.

Step 6

Preheat the grill to medium.

Step 7

Place the marinated skewers on the grill and cook, turning often, until the chicken is cooked to 165 degrees F internally, about 6-8 minutes.

Step 8

In a small bowl, combine the tahini, lemon juice, garlic, water, and remaining salt, stirring until smooth.

Step 9

Serve the chicken warm with tahini sauce and garnished with parsley.
