Greek Pasta Salad takes a refreshing and hearty take on a summertime cookout classic! Tender-cooked pasta is nestled with tangy olives, sharp feta cheese, and garden vegetables with a dressing infused with oregano and olive oil. Greek Pasta Salad adds a magnificent touch of the Mediterranean to barbeques or afternoon snacks. You can even make it a full meal with some grilled chicken on top.
Ingredients
• 16 ounces short pasta
• 1/4 cup red wine vinegar
• 1/3 cup olive oil
• 1/2 teaspoon garlic powder
• 1 teaspoon oregano
• salt, to taste
• pepper, to taste
• 3/4 English cucumber, diced
• 2 tomatoes, sliced
• 1/2 cup black olives, pitted
• 1/2 cup feta cheese, cubed
Directions
Step 1
Cook the pasta according to package instructions.
Step 2
Drain the pasta and set it aside.
Step 3
In a small mixing bowl, whisk together the red wine vinegar, olive oil, garlic powder, oregano, salt, and pepper to taste.
Step 4
In a large salad bowl, toss the pasta, dressing, cucumber, tomatoes, black olives, and feta cheese together.
Step 5
Refrigerate and serve cold.
