The title of vintage-tinged soup is a bit misleading—there is actually beef in Granny’s Vegetable Soup. But there are also enough veggies to make it feel like you’re getting your daily serving in. While Granny's Vegetable Soup simmers on the stove, your home will be filled with wonderful aromas akin to grandma’s house.
Ingredients
• 1 pound ground beef
• 1 (46 ounce) can tomato juice
• 1 onion, chopped
• 2 carrots, chopped
• 2 potatoes, diced
• 1 (14 ounce) can whole kernel corn
• 1 (14.5 ounce) can green beans
• ground ginger, to taste
• salt, to taste
• ground black pepper, to taste
Directions
Step 1
Crumble the ground beef into a large saucepan over medium heat. Cook and stir until the ground beef is no longer pink.
Step 2
Drain the grease, then pour in the tomato juice.
Step 3
Add the carrot, onion, and potato.
Step 4
Pour in the green beans and corn.
Step 5
Season to taste with salt, ginger, and pepper.
Step 6
Reduce the heat to low and allow to simmer for 1 hour.
Step 7
Serve warm.
