Garlic Roasted Parmesan Cauliflower

The cauliflower craze might seem…well, crazy, but once you try Garlic Roasted Parmesan Cauliflower, you’ll be totally on board. Cauliflower has a natural mildness and tenderness that blends easily with other flavors such as sweet and savory garlic and sharp parmesan. Coated in crunchy baked breadcrumbs, Garlic Roasted Parmesan Cauliflower is just as satisfying as any fried fare. This is a healthy side to serve alongside burgers or creative sandwiches.


1 medium cauliflower head
1/2 cup butter, melted
2 cloves garlic, minced
1 cup Italian breadcrumbs
1/2 cup parmesan cheese, grated
1/4 teaspoon salt
1/4 teaspoon black pepper


Step 1

Preheat the oven to 400 degrees F.

Step 2

Line a large baking sheet with parchment paper. Set aside.

Step 3

Remove all the leaves from the cauliflower head.

Step 4

Cut the cauliflower into florets, all roughly the same size. You can slice the large florets in half, if needed.

Step 5

In a small bowl add the melted butter and minced garlic, stirring to combine.

Step 6

Place the breadcrumbs, parmesan cheese, salt, and pepper in another bowl.

Step 7

Dip each cauliflower piece into the butter first, then into breadcrumbs.

Step 8

Place each breaded piece onto the prepared baking sheet.

Step 9

Repeat until you use up all of the cauliflower.

Step 10

Roast the cauliflower until the breading is golden brown, about 32 to 35 minutes.
