The Fluffiest Buttermilk Waffles are a beautiful breakfast treat that will make your morning magnificent!


2 large eggs
1 3/4 cups buttermilk
8 tablespoons unsalted butter, melted and cooled
2 teaspoons vanilla extract
2 cups pastry flour or 1 3/4 cups all-purpose flour
2 tablespoons granulated sugar
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
1/2 cup pecan meal or almond flour, optional, for flavor


Step 1

In a medium-sized mixing bowl, beat the eggs, buttermilk, melted butter, and vanilla.

Step 2

In a separate bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and pecan meal.

Step 3

Combine the wet and dry ingredient mixtures, stirring until nearly smooth, with a few small lumps remaining.

Step 4

Cover the bowl containing the batter with plastic wrap.

Step 5

Refrigerate the batter for 10 minutes; this step helps the gluten in the batter relax and helps the waffles become extra fluffy.

Step 6

Spray a waffle iron with non-stick cooking spray before preheating it.

Step 7

Preheat the waffle iron.

Step 8

Cook the waffles according to the waffle iron directions, about 2-3 minutes per waffle.

Step 9

Serve warm.
