Whether it's time for a celebration or you just want the celebrating to start, the Fiesta Enchilada Casserole certainly gets everyone in the right spirit. The beef and beans kick off this savory party, with the salsa and salad dressing setting up the streamers that will have your tastebuds screaming in delight. Melty cheese and crunchy, refreshing veggies even form a lovely party hat of flavor! Fiesta Enchilada Casserole has all the fun of enchiladas with the shareable delight of a casserole: how could you not start dancing from the joy of it?


Ingredients

1 pound lean ground beef, 90% lean
1 large onion, chopped
2 cups salsa
1 (15-ounce) can of black beans, rinsed, drained
1/4 cup reduced-fat Italian salad dressing
2 tablespoons reduced-sodium taco seasoning
1/4 teaspoon ground cumin
6 (8-inch) flour tortillas
3/4 cup reduced-fat sour cream
1 cup reduced-fat Mexican cheese blend, shredded
1 cup lettuce, shredded
1 medium tomato, chopped
1/4 cup fresh cilantro, minced

Directions

Step 1

Preheat the oven to 400 degrees F.

Step 2

Coat a 7x11-inch baking dish with cooking spray.

Step 3

In a large skillet over medium heat, cook the beef and onion until the meat is no longer pink, about 6-8 minutes.

Step 4

Drain the fat from the skillet.

Step 5

Stir in the salsa, beans, dressing, taco seasoning, and cumin.

Step 6

Place 1/2 of the tortillas in the prepared baking dish.

Step 7

Layer in 1/2 of the meat mixture, 1/2 of the sour cream, and 1/2 of the cheese.

Step 8

Repeat the layers, starting with the tortillas.

Step 9

Cover and bake for 25 minutes.

Step 10

Uncover and bake until heated through, about 5-10 minutes.

Step 11

Let stand for 5 minutes.

Step 12

Top with the lettuce, tomato, and cilantro.

Step 13

Serve.
