Carrots usually play a supporting role in salads, but now it's time for them to experience their main character moment, thanks to this Favorite Carrot Salad! Crunchy, shredded carrots make up the base, deeming them the star of the show. Tossed in a sweet and savory dressing, and mixed with earthy parsley and oniony scallions, Favorite Carrot Salad deserves an award for its tasty performance!


1 pound of carrots, peeled
2 teaspoons dijon mustard
1 tablespoon lemon juice
1-2 teaspoons honey
1 1/2 tablespoons vegetable oil
1 1/2 tablespoons extra-virgin olive oil
1/4 teaspoon salt
1/4 teaspoon ground black pepper
2 tablespoons parsley, chopped
1 tablespoon scallions, finely chopped


Step 1

Shred the carrots in a food processor.

Step 2

In a large bowl, combine the dijon mustard, lemon juice, honey, vegetable oil, olive oil, salt, and pepper.

Step 3

Add the carrots, parsley, and scallions to the dressing and toss well.

Step 4

Taste and adjust the seasoning of the salad if necessary.

Step 5

Plate and serve.
